5 Ingredient Chicken & Dumplings


I am from The South. Trenton, Georgia to be exact. It’s a small town nestled between two mountains (Sand and Lookout) and practically in the arm pit of Tennessee and Alabama (Roll Tide). It is beautiful. Seriously, the most beautiful place I’ve ever been. The summers are green and lush, the fall is 1000 different shades of yellow and orange. I know every back road like the lines on the back of my hand. I love being from the South. It’s full of history, beautiful landscapes and food – really, really good food. And one of my favorites is Chicken & Dumplings.

What’s not to love?  Tender chicken and pieces of doughy goodness, covered in a creamy sauce sent straight from Heaven’s kitchen. I’ve tried my hand at a few different recipes but had not found my favorite yet – until tonight. After combining different elements from several different recipes, I came up with this creation – 5 ingredient Chicken & Dumplings.

Here’s what you’ll need:
3 cups of cooked chicken
1 onion
32 ounces of low sodium chicken broth
1 10 ounce can of cream of chicken soup
1 can of Pillsbury biscuit dough

Here’s what to do:
This recipe calls for 3 cups of cooked chicken. I made my chicken in my handy dandy Instant Pot, but you can make the chicken any way you like, or use a rotisserie chicken to save time! I had frozen chicken on hand so I chose to use the good ol’ IP.
For Easy Instant Pot Chicken – add 1 cup of water and rack to pot. Season chicken with seasonings of choice (I just used S&P for this recipe). Put the lid on and make sure the valve is in the sealed position. Cook on manual setting for 10-12 mins for frozen chicken (depending on thickness), and 8 mins for thawed chicken. When the timer goes off, let it sit for 10 mins, then do quick release, and voila! Perfectly cooked chicken! Once the chicken is cool enough to handle, shred it.

In a large pot or Dutch oven, saute one diced onion on medium high heat until translucent – between 8-10 mins.
Once translucent, add in chicken broth, soup, and chicken. Season with salt and pepper (feel free to add whichever seasonings you want). Bring to a boil, then reduce heat to medium low and simmer for 5 mins.

While that is cooking, take your biscuit dough (yes, you could make from scratch if you wanted, but this is so much easier) and flatten out to about 1/8 inch thickness, and cut into ½ inch pieces. I used a pizza cutter! I also used a little flour on the board to keep the dough from sticking. 
Slowly add in dough pieces one at a time until all of the dough is in the pot. Cover and let simmer for 15-20 mins. I checked mine every 5 to stir to make sure nothing got stuck together or to the pot. I cooked mine for right at 20 mins and it was perfect.

OPTIONAL: You could also add in some chopped carrots and celery for some added veggies! I did not try that this time, and that no longer makes it 5 ingredients, but still super simple and nutritional!
So there you have it! Easy, yummy, 5 ingredient Chicken and Dumplings. My husband, who isn't normally a big fan of this dish ended up loving it!
